Meet the Maddy
It was about two years ago that my good friend Corin and I got together for one of our dinner dates. As usual, we would spend the evening catching up on life while drinking a glass (bottle) or two of wine, and pour over cookbooks and magazines to inspire a menu that nourished our souls. I am fuzzy on what meal we created for dinner that night, but what I do remember was the dessert we made: Florentine cookies.
I think I fell in love with the method of making the florentine, even before falling in love with the cookie itself. I geeked out a little when the cookie came out of the oven; it was so pretty and looked a bit like lace. It starts with a basic caramel, sugar, and a bit of butter over medium heat.
Next, add a roasted ground almond mixture with vanilla and a little zest from an orange. Stir that goodness together and bake it. Once these delights were out of the oven and cooled, I drizzled a rich dark chocolate onto them.
My first bite was so blissful. There was a snap between my teeth when I took my first bite created by the ground almonds that had caramelized in the oven. As I was chewing, slightly crunching, the flavors unfolded in my mouth. It was rich and nutty with a surprising zing citrus that brightened the bite. Ugh! I thought, ”This is yummy!”
And it was from that moment, from that perfect bite, that the Maddy was born.
